Avocado Toast
Ingredients
2 slices of sourdough
1 tbsp butter
1 large avocado, peeled and pitted
1 tbsp lime juice
1 tsp sea salt
¼ tsp black pepper
1 clove garlic, crushed
¼ tsp extra virgin olive oil
6 cherry tomatoes, sliced
¼ tsp chili pepper flakes
1 tbsp parmesan cheese, grated or shredded
Fresh cilantro for garnish
Instructions
In a skillet, melt butter over medium heat. Add bread and brown on both sides.
In a small bowl, lightly mash the avocado with lime juice and sea salt, garlic, and black pepper.
Spread avocado mixture, drizzle olive oil, and sprinkle pepper flakes onto each piece of the toasted bread.
Top with sliced tomatoes, and sprinkle parmesan cheese. Garnish with fresh cilantro.
Air Fryer Buffalo Wings
Ingredients
12 wing sections (drumettes and flats)
1 tsp paprika
1/2 tsp salt
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp White Pepper
1/4 tsp cayenne pepper
1 tbsp Baking Powder
1/4 cup your favorite hot sauce or hot sauce seasoning
2 tbsp butter
3 tbsp Italian dressing
1 clove garlic, minced
2 tbsp grated Romano or parmesan cheese (optional)
Instructions
Preheat your air fryer to 400℉
Pat wing sections dry.
Coat wing sections with all the dry spices and baking powder.
Place in air fryer basket and cook wings for 15-20 mins or until cooked through to your liking, turning halfway through cooking.
In a saucepan over medium heat melt down butter, add garlic and let cook until fragrant ensuring it doesn’t burn. Add in hot sauce, Italian dressing, and grated cheese. Stir and reduce heat to simmer for an additional 2 mins.
Add cooked wings to a mixing bowl, pour buffalo sauce over wings, and toss until evenly coated.
Serve with your favorite ranch or blue cheese dressing.
Garlic Butter Shrimp Pasta
Ingredients
1 lb shrimp, peeled and deveined
2 cloves minced garlic
1/2 tbsp old bay seasoning
1/2 tsp lemon pepper seasoning
1 tsp salt
½ tsp garlic powder
1/2 black pepper
1 shallot, diced
1/3 cup chopped parsley
1 roma tomato, diced
1/2 lemon, juiced
3 tbsp butter
2 tbsp extra virgin olive oil
1 tbsp oregano
1 tsp crushed red pepper flakes
1 lb of linguine or pasta of choice
Instructions
In a large pot, bring salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of pasta water, drain pasta, and set aside.
Season shrimp with old bay, lemon pepper, salt, and garlic powder.
Add olive oil to skillet over medium-high heat. Once warm, add diced shallot and minced garlic. Cook for 2 mins until fragrant.
Melt butter in the same pan, and add shrimp. Cook for 2-3 mins on each side.
Add diced roma tomatoes, chopped parsley, oregano, and red pepper flakes. Cook for an additional 2 mins. Add lemon juice and reserved pasta water. Stir until combined.
Transfer the fettuccine into the pan, stir until evenly distributed. Top with parmesan cheese and more parsley before serving.
